Pecan Coffee Cake – Gluten Free

Preheat oven to 350F and grease a 9 x 13 glass baker

Combine;

  • 1 cup chopped pecans
  • ¾ cup chopped craisins
  • ½ cup brown sugar
  • 1 ½ tbsp cinnamon (or to taste)
  • 2 tbsp maple syrup
  • ½ cup melted butter

spread over bottom of prepared pan

Beat;

  • ½ cup oil
  • 4 eggs
  • 1 tbsp apple cider vinegar
  • ¾ cup sugar
  • 2 cups vanilla yogurt

Stir together;

  • 2 ½ cups flour mix
  • ¾ cup potato starch
  • 1 tbsp baking powder
  • 2 tsp baking soda
  • 2 tsp xanthan gum
  • pinch sea salt


Stir into wet ingredients & beat for a minute + (add a little milk if too dry& crumbly). Bake 45 -55 minutes until tester comes out clean. Invert immediately onto serving plate and drizzle with warm maple syrup if desired. Tuck in with a napkin, close your eyes, & enjoy!
